For Filipino Catholics, Simbang Gabi (means night worship, pronounced as “seem-bahng gab-bee”) is a typical way of preparing for the great feast of Christmas.  Filipinos attend the nine-day devotional masses leading up to the birth of Jesus on Christmas Day. Simbang Gabi stems back to the Spanish regime in the Philippines.  The faithful wake early in the morning to join in celebration of the dawn mass. After the mass, the church goers enjoy sharing rice delicacies cooked by the vendors outside on the church grounds.
